Ingredients for two dozen cookies: 1 cup dates 1 large carrot 2 cups walnuts 1/4 cup unsweetened shredded coconut 1 tablespoon ground flaxseed 1/2 teaspoon vanilla 1 1/2 teaspoons cinnamon 1/4 teaspoon salt First, puree dates in a food processor, then remove and place in a large bowl. Cut the carrot into one-inch pieces and add them to the food processor. Pulse until they are finely chopped, then add them to the bowl with the dates. Pulse the walnuts in the food processor until they are broken up into very small pieces, then add them to the bowl. Add the remaining ingredients to the bowl and use your hands to combine the ingredients. You can also dump it all back into the food processor to save time. Then taste, and adjust seasonings if needed. Form the dough into balls that are about the size of a ping-pong ball and flatten gently between your palms.
